›What cookware do I actually need?
Five pieces cover nearly everything most people cook: a 10 or 12-inch skillet, a 3-quart saucepan with a lid, a 6 to 8-quart stockpot, one coated pan for eggs, and a half sheet pan. Everything beyond that covers a specific cuisine or preference rather than a gap.
›Should I buy a cookware set or individual pans?
A set for an empty kitchen, because fully clad pans bought together genuinely cost less than the same pans bought separately and matched lids are worth more than they look. Individual pans once you know what you cook. Always buy the coated pan separately, because it wears out on a different clock from everything else.
›How many pans does a kitchen need?
Three cover most cooking, five cover almost all of it, and beyond seven you are storing duplicates in near-identical sizes. Count by simultaneity: how many vessels are on your hob at once on a busy evening, plus one.
›How much should I spend on cookware?
Enough for fully clad construction rather than disc-bottom, which is the one economy you notice every time you make a sauce. Above that, extra spending buys oven ceilings, warranty terms and published documentation rather than performance you can taste.
›What is the difference between fully clad and disc-bottom cookware?
Fully clad runs an aluminum core through the whole pan including the sidewalls. Disc-bottom welds an aluminum slug to the base only, so the walls stay cool and sauces scorch in a ring over the burner. It is the single most useful thing to check on any listing.
›What is the best cookware material?
There is no single best one, because the two properties that matter pull against each other. High conductivity gives evenness and responsiveness; high mass gives searing power. Clad stainless is the best default, with cast iron or carbon steel added for searing and one coated pan for release.
›Why is stainless steel cookware layered with aluminum?
Because type 304 stainless conducts heat at only 15 to 16 W/m-K against aluminum's 237 — roughly fifteen times worse. A solid stainless pan would have a hot spot over the burner and cold walls, so the aluminum core does the heat spreading and the stainless does the durable, non-reactive food contact.
›Is cast iron or carbon steel better?
They are chemically almost the same metal formed differently. Cast iron is poured and must be thick, so it holds more heat; carbon steel is rolled to 2 to 3 mm, so it weighs roughly half as much for the same diameter, responds faster, and has sloped sides you can toss food in.
›Why does food stick to my stainless steel pan?
The pan was not hot enough when the food went in. Cold protein bonds chemically to bare steel. Heat the dry pan until a flicked droplet of water beads and skates across the surface rather than sizzling, then add fat, then food.
›Can you use soap on cast iron?
Yes. Lodge's own published care instruction is to wash with warm soapy water and dry completely. Seasoning is polymerized oil chemically bonded to the iron, not loose grease that detergent dissolves. Leaving the pan wet is what actually causes damage.
›Is nonstick cookware safe?
At normal cooking temperatures, regulators say yes. PTFE is authorized for food contact under 21 CFR 177.1550 and the FDA states that studies show negligible amounts of PFAS in the coating can migrate to food. The genuine caution is never heating an empty coated pan.
›Is ceramic cookware safer than nonstick?
It contains no PFAS, which is a real difference and a coherent reason to choose it. The practical exposure difference from an intact pan is small, and ceramic release declines faster. The strongest honest argument for ceramic is that it fails more gracefully if overheated.
›How long does a nonstick coating last?
No manufacturer publishes a figure, for PTFE or for ceramic. That silence is the most useful fact in the category: treat any coated pan as a consumable and buy at a price you would replace without regret.
›Did the FDA ban PFAS in cookware?
No. The January 2025 FDA action concerned 35 notifications for PFAS grease-proofers on paper and paperboard food packaging, which had been abandoned. Cookware coatings were not covered and PTFE remains authorized. You will see this action cited otherwise on ceramic cookware listings.
›How do I know if a pan works on induction?
Hold a fridge magnet against the flat base. A firm grip that needs a tug to release means it will work. Note that 18/10 stainless on its own is not magnetic — induction-ready clad pans bond a magnetic stainless outer layer.
›Do you test the cookware you recommend?
No, and we say so on every page. We own none of it and run no lab. We compile published manufacturer specifications, read the manuals and warranty terms, do the arithmetic, and link every source so you can check the reasoning yourself.
›Then why should I trust your recommendations?
Because every input is a public document and every one is linked, so the reasoning is reproducible. You can follow the same steps and reach the same conclusion, or catch us being wrong. A proprietary score cannot offer that.
›Why are there no star ratings on this site?
A rating implies a test we have not run. Publishing one would contradict our own methodology page in the same breath, so there is no score on any page and no aggregateRating in the structured data either.
›How does Pan & Provision make money?
