The short answer
Start with a honing rod, not a sharpener. A knife that has gone dull in normal use usually has an edge that is bent rather than worn away, and ten seconds on a steel straightens it. Actual sharpening removes metal and is needed a few times a year at most. For that, a whetstone gives the best result and takes practice; a guided-angle system gives a good result with none; a pull-through sharpener is fast, convenient, and removes considerably more steel than either.

Honing is not sharpening
This is the distinction the whole page turns on, and most people have never had it explained.
The cutting edge of a knife is extremely thin - a few microns across. In normal use it does not wear away so much as it rolls: it bends over to one side, microscopically, and a bent edge presents a curved surface to food instead of a point. The knife feels blunt. The steel is still there.
A honing rod pushes that edge back into line. It removes almost no metal. Ten seconds before each session, and a knife can stay usable for months between actual sharpenings.
Sharpening is different: it grinds away steel to form a new edge. It is necessary eventually, and every time you do it the knife gets fractionally smaller.

The first two rows are maintenance and the rest are surgery. The single biggest improvement most kitchens can make is doing more of the first two and less of the last two.
What a pull-through sharpener really does
The cheap V-shaped devices with two carbide plates work by scraping steel off both sides of the edge at a fixed angle. They do produce a sharp knife, quickly, with no skill.
The costs are worth understanding before you buy one:
They remove a lot of steel. Visible scrape marks and a noticeably narrower blade after a couple of years of regular use.
The angle is fixed and may not be your knife's angle. Japanese knives are typically ground more acutely than Western ones, and a Western-angle pull-through reshapes them.
The edge is coarse. Sharp in a tearing sense rather than a slicing one.
They cannot follow a curved blade well, so the tip and heel get uneven treatment.
They are a reasonable choice for inexpensive knives you expect to replace. They are a poor choice for a knife you intend to keep.
The whetstone case
A two-sided water stone - typically 1000 grit on one face and 3000 to 6000 on the other - is the cheapest good sharpening equipment there is, and the only method that gives full control over the angle.
Soak the stone if it is a soaking type, usually ten minutes, until bubbles stop.
Find the angle. Around 15 degrees per side for Japanese knives, 20 for Western. Two stacked coins under the spine is a rough guide on a chef's knife.
Work one side until a burr forms along the whole length - you can feel it with a thumb drawn off the edge, never along it.
Turn over and repeat until the burr moves to the other side.
Refine on the fine side, lighter pressure, until the burr breaks off.
Strop on cardboard or leather to remove what is left.
It takes a few attempts to get consistent. The learning cost is real, and it is paid once.
Practice on a cheap knife first. The failure mode of learning on a whetstone is a rounded edge from an inconsistent angle, which is recoverable but tedious - and demoralising on a knife you like.
Guided systems, which are the honest middle
A clamp holds the blade and a rod holds the stone at a set angle, so the angle is the machine's problem rather than yours. The result is close to a well-used whetstone, consistently, with no practice.
The trade is setup time - clamping and adjusting takes longer than freehand once you can freehand - and cost, which is higher than a stone and lower than a good electric machine. For most people who want a genuinely sharp knife and do not want to learn a skill, this is the right answer.
Why a conservative method matters here
Knife makers are unusually quiet about steel. Victorinox publishes blade length, weight, handle material, country and warranty for its Fibrox range, and does not publish the blade steel grade or the hardness. We recorded that gap in best chef knives, and the same absence appears on its kitchen shears.
Hardness is what tells you how a knife should be sharpened. A harder blade holds an acute angle and chips if you force it; a softer one takes a wider angle and rolls rather than chips. Without a published figure you are guessing - which is a practical argument for honing often and grinding rarely.
What actually keeps a knife sharp
Cut on wood or soft plastic. Glass, stone, and ceramic plates roll an edge in one stroke - best cutting boards.
Hone before you cook, not when the knife has already stopped working.
Wash and dry by hand, immediately. A dishwasher bangs blades against other items and the detergent is hard on the edge.
Store on a magnetic strip, in a block, or in a guard. Loose in a drawer is how edges get chipped.
Do not scrape food off the board with the edge. Turn the knife over and use the spine.
Do not cut through bone with a chef's knife. That is what shears and a cleaver are for.
