The short answer
Buy on three published numbers: read speed in seconds, stated accuracy in degrees, and probe tip thickness. A good instant-read gives a stable number in two to four seconds, states accuracy of about plus or minus 1F, and has a thin tapered tip that does not leave a crater in a steak. Anything advertising "instant" without publishing a time is not fast. This is the cheapest single purchase that improves cooking, and it matters most with cast iron, where heat is stored rather than controlled.

The three published specifications
Read speed
The time to a stable reading, published in seconds. Two to four seconds is genuinely fast; eight to ten is common on inexpensive units and feels like an age with an oven door open. A slow thermometer does not just test your patience - it changes the result, because the oven is cooling while you wait.
Accuracy
Published as plus or minus a figure, usually over a stated range. Plus or minus 1F is excellent, 2F is fine, and anything above 4F is not precise enough to distinguish medium rare from medium.
Probe thickness
Rarely published and worth looking for. A thick probe tears a hole in a steak, loses juice, and needs to travel further to reach the center. A thin tapered tip reaches the middle of a thin fillet at all, which a fat probe cannot.

Pull temperatures allow for carryover cooking, which continues after the food leaves the heat. Published safety guidance is the USDA figure; the lower pull numbers are cooking practice, not a food-safety recommendation.
The distinction matters. USDA publishes minimum safe internal temperatures and those are the figures to follow if food safety is your concern, particularly for poultry, pork and ground meat. Lower pull temperatures are a cooking preference that carries the risk the published guidance is there to manage.
Using one properly
Aim for the thickest part, away from bone and away from the pan surface. Bone conducts and reads hot; the pan side reads hotter still.
Push through and pull back. Go past the center, then withdraw slowly and watch for the lowest reading - that is the middle.
Enter from the side on thin cuts, not from the top. On a half-inch fillet, a top entry cannot reach a center.
Take two or three readings in different spots on anything large. One reading on a whole chicken tells you about one part of a chicken.
Calibrate in ice water occasionally. A well-stirred ice bath is 32F. If your thermometer disagrees, it is out and you should know by how much.
Why it matters most with cast iron
On a clad pan you control heat with the dial and the pan responds. On cast iron you do not - the pan stores heat and releases it on its own schedule, which is exactly what makes it good at searing and exactly what makes timing unreliable.
Two minutes a side means nothing when the variable is how hot the iron was when the steak landed. Internal temperature is the only signal that is actually about the food. Practically, this is why a thermometer improves cast iron cooking more than any other purchase - the argument is in best pans for searing steak.
Types, briefly
Folding instant-read. The default. Fast, accurate, goes in a drawer.
Leave-in probe with a cable. Stays in the meat with the display outside the oven. Different tool, and the right one for a long roast.
Wireless probe. No cable through the oven door. Convenient, more expensive, another thing to charge.
Infrared surface thermometer. Reads surface temperature, not internal. Useful for pans, griddles and pizza stones, and useless for meat - best pizza stones and steels.
Dial bimetal thermometer. Slow, imprecise, needs recalibrating. The one type not worth buying now.
