Steel beats stone, because the job is moving heat into wet dough quickly and steel conducts roughly three times better than cordierite. Cast iron sits between them and does not crack. Whatever you buy, the preheat is the variable that decides the result: 45 minutes to an hour at the oven's maximum, not the 15 minutes most instructions suggest. A surface that is merely in a hot oven is not a hot surface.

The physics, which settle the argument
A pizza cooks from below. The base has to set and color before the top overcooks, and that means moving a lot of heat into wet dough in the first ninety seconds. A wood oven does it with a 800F floor. A home oven tops out around 500 to 550F, so the surface has to compensate by giving up its stored heat faster.

Conductivity is only half the story. Stored heat - mass times specific heat - is the other half, which is why a thin aluminum sheet conducts brilliantly and still underperforms a heavy steel.

Where steel wins
Base browning, decisively. Nothing else at home gets close.
It cannot crack, chip or absorb moisture.
It reheats between pizzas faster, which matters from the second pizza onward.
It works as a general baking surface - bread, rolls, anything that wants oven spring.
Where stone wins
Price. A stone is typically a fraction of a steel of the same footprint.
Weight. A half-inch steel is brutally heavy; a stone of the same size is not.
Forgiveness. Slower heat release means a thin base is less likely to burn.
It is the right choice for a long, slow bake such as a sourdough boule.
The crack risk is the stone's real weakness, and it is the same thermal-shock mechanism that governs glass bakeware. A stone cracks when it is heated unevenly, cooled quickly, or put away damp and then heated - so it stays in the oven permanently, and it never gets washed with water.
What we have audited, and what we have not
Our ledger contains a cast iron pizza pan and not a baking steel. That matters, because the page above recommends steel on physics while our audited pick is iron. Both are honest statements and they belong together rather than one of them quietly disappearing.
Lodge publishes a 15 in diameter, 19.25 by 15.0 by 1.2 in overall dimensions, 9.91 lb, seasoned with 100% natural vegetable oil, oven safe and explicitly not recommended for stovetop use. It does not publish an oven temperature ceiling on that page.
One specification is worth checking before you buy a steel: thickness. A quarter inch is the usual home thickness and already weighs around 15 lb at 14 by 16 in. Half-inch steels exist, weigh roughly double, and take correspondingly longer to preheat. Heavier is not automatically better in a domestic oven.
The preheat, which is the whole technique
This is where most home pizza fails, and it costs nothing to fix.
Put the surface on a rack in the upper third of the oven, close enough to the roof that radiant heat browns the top while the base cooks.
Heat at the oven maximum for 45 to 60 minutes. The oven signals temperature when the air is hot, which is long before a 10 lb slab of iron is.
Use the broiler for the last five minutes of preheat if your oven allows it with the element above the surface.
Launch, and do not open the door for the first two minutes. Every opening costs you heat you spent an hour building.
An infrared thermometer is the honest way to know when a surface is ready, and it is the one instrument that changes this technique. We have not audited a model - infrared thermometers is the category.
The no-purchase route: a cast iron skillet
A 12 in cast iron skillet makes an excellent pan pizza and a decent thin-crust one. Press the dough into an oiled cold pan, top it, start it on the stovetop for two to three minutes to set the base, then finish in the hottest part of the oven. You get the conduction of iron and a fried bottom edge that no stone produces.

Getting the pizza onto the surface
The launch is the other thing that goes wrong, and it is a technique problem rather than an equipment one.
Semolina, not flour, on the peel. It behaves like ball bearings; flour absorbs moisture and glues.
Build fast and launch fast. Dough left on a peel for four minutes will not move.
A sheet of parchment is the beginner answer. Build on parchment, slide the lot on, pull the parchment out after a minute. You lose a little base contact and you gain every pizza actually landing.
A rimless sheet pan is a peel. A half sheet turned upside down works too.
Care, which is mostly leaving it alone
Stone: scrape when cool, never soap, never soak, and let it live in the oven. Stains are permanent and harmless.
Steel: it is bare iron, so it rusts. Scrape, wipe, and keep a film of oil on it exactly as you would season a pan - seasoning carbon steel applies directly.
Cast iron pan: the same. Lodge publishes hand wash, dry, oil.
Which to buy
Best base browning, no object: a quarter-inch steel, bought on thickness and footprint rather than brand.

The trade-off. Bare aluminum discolors and reacts with acid. It will look used within a month and Nordic Ware advises against the dishwasher.
Skip this if. You want a pan that stays looking new, or you will not hand wash. Buy an aluminized-steel coated pan instead and accept the coating as a wear item.
For pizza, yes. Steel conducts roughly fifteen times better than cordierite, so it moves heat into the base far faster, which is exactly what a home oven cannot do on its own. Stone is cheaper, lighter and more forgiving, and is the better choice for slow bread bakes.
