Why volume measuring fails
A cup is a volume. Flour is compressible. How much flour is in a cup depends entirely on how it got there - scooped straight from the bag and packed down, or spooned in and levelled off.
The difference between those two methods is substantial, and it is the single largest source of inconsistency in home baking. A recipe that works for its author and not for you is very often this, and nothing else.

Every row favors the scale, and the last three are the ones people notice first in practice. The cup survives because it is familiar, not because it is accurate.

The three specifications that matter
Capacity
At least 11 lb or 5 kg. That sounds excessive until you remember the bowl is on the scale too - a heavy glass bowl plus bread dough gets there faster than you expect. Under about 7 lb and you will hit the limit.
Increment
One gram. Scales that read in 5 gram steps cannot distinguish 2 g of yeast from 6 g, which is the difference between bread and a brick. Some scales offer a high-precision mode in 0.1 g increments for small quantities, which is genuinely useful for salt and yeast.
Tare
The button that zeroes the display with a container on the platform. It is what lets you put a bowl down, zero, add flour, zero, add water, zero - one bowl, one scale, no arithmetic. Every scale worth buying has it; how easily it is reached matters.
The features that actually get used
A platform larger than a mixing bowl's base, so the bowl sits stably. Small platforms with large bowls are the most common frustration.
A display that is not hidden by the bowl. A pull-out display or a front-edge screen. This is the specification most worth checking in photographs.
Grams and ounces, switchable. Most American recipes are in ounces, most bread recipes in grams.
A slow auto-off, or one you can disable. Scales that shut down after 60 seconds turn off mid-recipe, constantly.
A sealed or wipeable surface, because flour gets everywhere and a seamed platform holds it.
Standard batteries rather than a proprietary rechargeable, unless you will actually charge it.
What does not matter: bluetooth, apps, nutritional databases and built-in timers. They add cost and failure modes to a device whose entire job is to display one accurate number.
Where a scale changes results most
Bread. Baker's percentages - hydration expressed as a ratio of water to flour - are meaningless in cups and straightforward in grams. Every serious bread recipe is written by weight.
Pastry. Flour-to-fat ratios decide texture, and a heavy-handed cup of flour makes tough pastry.
Anything with yeast or chemical leavening, where the quantities are small enough that percentage error is large.
Cake, where the ratio between flour, sugar, fat and egg is the recipe.
Portioning, from dividing dough into equal rolls to weighing burger patties so they cook at the same rate.
Never immerse it. Wipe the platform; the electronics are underneath it.
Keep it flat and stable. A scale on a soft or uneven surface reads inconsistently.
Take the batteries out if it is stored for months, because a leaked cell ends it.
Check it against a known weight occasionally. A 100 g calibration weight is cheap; so is a sealed 500 g pack of something.
Do not leave it under a heavy bowl in a cupboard. Sustained load on the strain gauge is how accuracy drifts.
