The geometry, which is the product
Most domestic cake pans have slightly flared walls, because a tapered pan is easier to press in manufacture and easier to release. The consequence is a layer that is wider at the top than the bottom, which is why home layer cakes lean and why the sides need trimming before frosting.
Fat Daddio's pans have straight walls square to the base. The layer comes out with vertical sides and a flat top edge, which stacks cleanly. If you have wondered why bakery layers look sharper than yours, a large part of it is this and not technique.

What anodizing does here
Anodizing thickens the natural oxide layer on aluminum electrochemically, producing a harder, less reactive surface. On cookware that is usually a body treatment under a separate nonstick coating - the distinction drawn in stainless steel versus hard-anodized.
On these pans there is no coating. The anodized surface is the baking surface, and that is unusual and worth valuing: nothing can flake into a sponge, nothing wears out, and the pan does not react with acidic batters the way bare aluminum does.

Seamless construction
A seamless pan is drawn from a single piece rather than assembled from a base and a wall. Two practical consequences:
Nothing leaks. A seam or a rivet is a path for thin batter and melted butter - the exact problem springform pans have, covered in springform and tube pans.
Nothing traps. No corner where batter bakes on and no join to scrub, so a plain smooth pan washes in seconds.
It also means no removable base, so anything that cannot be inverted needs a different pan.
Hand wash only, and why
Fat Daddio's publishes hand wash only. The reason is the finish: dishwasher detergent is strongly alkaline, and repeated cycles dull and darken an anodized surface permanently.
The pan still works afterward - the damage is cosmetic and the anodized layer is not a coating that can fail - but it will never look new again. It is the same mechanism that darkens bare aluminum, which Nordic Ware also advises against. What cookware is dishwasher safe lists who publishes what.
Darkening also changes behavior slightly over years: a darker pan absorbs more radiant heat and bakes marginally faster. Fat Daddio's publishes that its pans darken with age, which is an honest disclosure most bakeware brands do not make.
