Bare aluminum, and why it is the right answer
Nordic Ware's Naturals line is uncoated aluminum. Aluminum conducts heat at roughly 237 watts per meter-kelvin, which is why a bare aluminum sheet browns evenly and a steel one does not, and why a bare aluminum cake pan produces a level cake rather than a domed one with dark edges.
The more important property for a buyer is what is absent. There is no coating, so there is nothing to flake, nothing to wear out and no lifespan the company is declining to publish - which is the pathology of the entire nonstick category, examined in how long nonstick lasts. A bare pan is one of the few genuinely buy-once items in a kitchen.

The encapsulated rim is the engineering
A flat sheet of aluminum in a hot oven will buckle - the familiar bang halfway through roasting is a thin pan warping and springing back. Nordic Ware rolls a steel wire into the rim of its sheet pans, which stiffens the perimeter and holds the sheet flat.
It is a small detail with a large effect and it is why these pans are the default recommendation in best sheet pans. Pans without it are the ones that bow, tip oil into a corner and eventually stop sitting flat on a rack.
The missing gauge
Thickness is the number that separates a good sheet pan from a thin one, and Nordic Ware does not publish it. That is the one real documentation gap in an otherwise well-documented line, and it means the comparison against a competitor comes down to weight in the hand rather than a specification.

The care guidance, which people ignore
Nordic Ware advises against automatic dishwasher use for the Naturals line and recommends hand washing for its cake pans. The reason is chemistry rather than caution: dishwasher detergent is strongly alkaline and reacts with bare aluminum, darkening and dulling it permanently.
The pan still works afterward. It simply stops looking new, and it will never look new again. Whether that matters is a personal judgment, and the full material-by-material list of who publishes what is in what cookware is dishwasher safe.
Bare aluminum also reacts with acid, so a tomato-heavy traybake left in the pan will mark it. That is cosmetic rather than a safety concern, and it is one reason glass earns its place for acidic dishes - glass versus metal bakeware.
