Best whisks and mixing tools

Three whisk shapes exist for three different mechanical reasons. Owning the wrong one is why sauces go lumpy and egg whites do not rise.

The short answer

Own a balloon whisk for aerating in a bowl and a flat whisk for sauces in a pan - they are not interchangeable, because one is built to trap air and the other to reach a pan's corners. Add one flexible silicone spatula, which is the single most useful mixing tool in a kitchen and the only one that empties a bowl completely. Stainless whisks are fine in every pan except coated ones, where silicone-coated wires are the only safe option.

Three shapes, three jobs

Balloon whisk

Wide, rounded, with many thin flexible wires. Built to fold air into a liquid: egg whites, cream, batters. The volume of the cage is the point - more wires moving through more air means faster aeration.

French whisk

Narrower, more tapered, with stiffer wires. Built for emulsions and sauces in a deeper vessel: vinaigrettes, hollandaise, custard. It reaches into a narrow pan where a balloon whisk is too wide to move.

Flat whisk

A flattened loop of wires in one plane, sometimes called a roux whisk. Built to get into the corner where a pan's wall meets its base, which is exactly where a roux catches and burns. Nothing else reaches that corner.

If you own one whisk, own a balloon whisk and a bowl. If you own two, the second should be flat - because that is the shape that prevents the most common cooking failure on the list.

The coated-pan problem

A stainless whisk in a non-stick saucepan is an efficient way to destroy the coating. Every wire is a thin hard edge moving fast across the surface, and unlike a turner you are not watching where it goes.

  • Silicone-coated whisks are the only safe option in coated pans. They are slightly less efficient at aeration because the wires are thicker.
  • Check the published heat limit, which for silicone wires is usually lower than for a solid silicone spatula.
  • Watch for coating loss on the whisk itself. Silicone worn off a wire exposes the metal underneath, and the whisk becomes a metal whisk without telling you.
  • Or use a bare metal saucepan for sauces, which is what most people who make a lot of sauce end up doing - best sauciers.

The tool that beats every whisk

A flexible silicone spatula - the kind with a one-piece head, no seam where the blade meets the handle - is the most useful mixing tool in a kitchen, and it is not a whisk.

  • It empties the bowl. A whisk leaves batter on the sides; a spatula does not, which is measurable in the finished quantity.
  • It folds without knocking out air, which is precisely the job a whisk does badly once the air is in.
  • It is safe on every surface, coated included.
  • One-piece construction matters. A two-piece spatula traps food in the seam and eventually separates in a hot pan.
  • Buy two sizes. A large one for bowls, a narrow one for jars and saucepans.

The sequence that gets used constantly: whisk to combine, spatula to fold and to scrape the bowl out. Most home bakers own three whisks and no decent spatula, and it is the wrong way round.

The bowl is half the tool

A balloon whisk needs a round-bottomed bowl. In a flat-bottomed one, the wires cannot reach the ring where the wall meets the base, and unmixed flour sits there until it appears as lumps in the batter.

Depth matters too: whipping cream in a shallow bowl throws it across the kitchen. A deep bowl, filled no more than a third, is the arrangement that works. Materials, capacities and what the makers publish are in best mixing bowls.

What to check when buying a whisk

  1. Where the wires enter the handle. A sealed joint is cleanable; an open one collects batter permanently and is the single biggest hygiene issue with whisks.
  2. Wire count and thickness. More, thinner wires aerate faster. Fewer, thicker wires are stiffer for heavy batters.
  3. Overall length. Ten to twelve inches is the useful range for a hand whisk; longer ones are for stockpots.
  4. Handle material. Stainless is dishwasher-tolerant; wood is not; rubber grips eventually perish.
  5. Balance. A whisk that is head-heavy is tiring in exactly the job - whipping - that takes the longest.
  6. Dishwasher guidance, which for sealed stainless whisks is usually fine and for anything with a wooden handle is not.
