The short answer
It depends entirely on the material. For clad stainless, spending more buys published construction, a higher oven ceiling and a warranty you may actually use over decades - a real return. For cast iron and carbon steel, the premium buys finish and smoothness, not performance, because the metal is the same. For coated pans, the premium buys almost nothing measurable: every coating wears, no maker publishes a lifespan, and an expensive one fails on the same schedule as a cheap one.
The question, asked properly
"Are expensive pans worth it" is really four separate questions, because the four materials have completely different cost curves. Answering it as one question is how people end up spending a lot on the category where money buys least.

Two rows say almost immediately. Those two rows are also where the most aggressive premium marketing happens, which is not a coincidence.
Clad stainless: the premium is real
This is the one category where paying more reliably buys something you can point at.
Construction you can verify. Fully clad against disc-bottom is a real, measurable difference in how a pan cooks - disc bottom versus fully clad.
Published thickness. Made In publishes 2.7 mm, Misen 3.0 mm. Thickness predicts heat retention and warp resistance.
Higher oven ceilings. 600F to 1050F at the premium end against 400F on some coated pans.
Warranties you might use. On a pan with no wear surface, a lifetime warranty is a claim about construction rather than a marketing line.
Published origin. Not performance, but it is information, and it correlates with companies willing to publish everything else.
The important caveat: the curve flattens early. A fully clad mid-market set gives you most of the benefit. Going from there to the top of the market buys refinement - welded handles instead of rivets, a surface treatment, a slightly better oven number - not a different class of cooking.
Concretely: a fully clad twelve-piece set can cost less than one premium open-stock skillet. If you are outfitting a kitchen rather than collecting pans, that arithmetic should decide it - set versus open stock.
Coated pans: the premium buys least
This is the strongest claim on the page, so here is the reasoning rather than the assertion.
No manufacturer publishes a coating lifespan. Not one, at any price - how long nonstick lasts.
Coatings fail by wear and thermal cycling, which happen to expensive coatings too.
Warranties exclude coating wear essentially universally, which means the premium does not buy recourse either.
What a premium does buy is the pan underneath - a clad body instead of stamped aluminum, a better handle, a flatter base. Those are real and they extend coating life by heating more evenly.
So the honest position is not "never spend on a coated pan." It is: spend on the body, never on the coating, and buy on the assumption that you will replace it. A heavy-gauge inexpensive pan replaced on a schedule beats a premium one you feel guilty about retiring.
Cast iron and carbon steel: the metal is the metal
A modern Lodge skillet and a skillet costing five times as much are both cast iron. The expensive one is typically machined smooth rather than left with a sand-cast texture, and it may be lighter and better balanced.
What smoothness actually changes
Less than the marketing suggests, and something. A polished surface seasons more evenly at first and releases eggs sooner. A rough surface builds seasoning into its texture and gets there too, over more cooking. After a year of use the difference narrows considerably.
Where the premium is genuinely defensible is weight and handle design - a lighter, better balanced pan gets used more. That is worth money if lifting is a constraint, and it is not a cooking-performance argument. The full comparison is in best cast iron skillets.
Carbon steel is the same story. A de Buyer publishes 3 mm and a Matfer publishes a welded handle; both are bare steel that will outlive you, and a pre-seasoned Lodge cooks the same food - best carbon steel pans.
What to spend on instead
If you have a fixed budget for a kitchen, this is the ordering that gets the most out of it:
One properly clad skillet or a clad set. This is the purchase that rewards money most.
Cast iron, cheaply. The performance is in the metal, which costs almost nothing.
A Dutch oven, mid-market. Enamel quality and handle design do vary, and this is a pot you will own for decades - best enameled Dutch ovens.
Coated pans, cheaply and repeatedly.
A knife and a board before a fourth pan. Prep tools get used every time you cook - best chef knives.

The trade-off. Handles are the weak point. They are riveted and sturdy, but they get hot on a gas ring in a way the more expensive clad brands' do not.
