How we chose these
We have not cooked in them. In this category, more than any other, that is less of a limitation than it sounds — because the thing that actually differentiates ceramic pans is what the manufacturer will state about the coating, and that is a documentary question rather than a cooking one. The method is here.
What we looked for: what the coating is made of, what the maker says it does not contain, its published heat limits, and whether anyone anywhere publishes a lifespan. The last one produced the most useful finding on this page.
What ceramic cookware actually is
It is not ceramic in the pottery sense and it is not a fired glaze. It is a sol-gel silica coating: a liquid silicon-dioxide solution sprayed onto an aluminum pan and cured, producing a thin, hard, slippery film.
GreenPan publishes this more plainly than anyone: Thermolon "is crafted from sand-derived raw materials, Silicon Dioxide (SiO2), and turned into a sprayable solution." That is a genuinely clear description and it is unusual — most brands in this category say "ceramic" and stop.
The pan body underneath is aluminum, which is why ceramic pans heat quickly and evenly: aluminum conducts at 237 W/m-K. The coating does the release; the aluminum does the cooking.
The number nobody publishes
Search every ceramic cookware manufacturer's site for how long the coating keeps releasing. It is not there. GreenPan publishes what Thermolon is made from, that it is PFAS-free, PFOA-free and free of lead and cadmium, and that the coating withstands 850F. It does not publish a lifespan, and neither does anyone else.
That silence is understandable — coating life genuinely depends on heat, utensils and washing, and no company wants a number a customer can hold them to. But it is the most important fact in the category and it has a direct buying implication.
Every coated pan is a consumable. Buy one at a price you would replace without regret, and do not buy a matching set, because a set puts five or six wear items on the same clock at a price that implies permanence.

The 850F figure, and how it gets misread
GreenPan publishes that cookware made with Thermolon "can safely be heated to 850F or 450C." That is a real number and it is about the coating.
The pan is a different matter. The aluminum body, the handle attachment and any handle material have their own limits, and those are lower — often considerably. You will see the 850F figure quoted on listings as though it were the pan's oven rating. It is not.
What the number does tell you is genuinely useful: an overheated ceramic pan will not release the fumes an overheated PTFE pan can. That is a real safety advantage and it is the strongest honest argument for ceramic.
Should you choose ceramic over PTFE?
There are two honest reasons and one dishonest one.
Honest reason one: the overheating margin. If a pan is ever going to be left empty on a burner in your kitchen — which happens in every kitchen eventually — ceramic fails more gracefully.
Honest reason two: the environmental argument. The EPA describes PFAS as "widely used, long lasting chemicals, components of which break down very slowly over time", present in the blood of people and animals worldwide. Choosing not to buy more fluoropolymer is a coherent position even if your own exposure from an intact pan is negligible.
The dishonest one: citing the FDA's January 2025 PFAS action as though it were about cookware. It concerned 35 notifications for PFAS grease-proofers on paper and paperboard food packaging, which had been abandoned. Cookware coatings were not covered and PTFE remains authorized. You will see this argument on ceramic listings. It is not a good one. Full detail in is ceramic cookware safe.
How to make a ceramic pan last as long as it can
Never preheat it empty. The single most damaging thing you can do to any coated pan.
Medium heat, always. Ceramic dislikes high heat more than PTFE does. Sear in stainless or cast iron.
Hand wash. Dishwasher detergent shortens coating life even where the pan is rated dishwasher safe.
No cooking spray. It builds a polymerized varnish on the coating that ruins release and is genuinely hard to remove.
Do not stack unprotected. Pan-on-pan abrasion in a cupboard does real damage.
Replace it when it stops releasing. A worn coated pan is a bad pan, not a cheaper one.
Medium heat and something in the pan. Those two rules account for most of the difference between a coating that lasts and one that does not.
What not to buy
A whole ceramic set. Five or six consumables, same clock, keepsake price.
An expensive ceramic pan. You are paying a premium for a wear item whose life nobody will state.
A ceramic pan as your only pan. It cannot brown, cannot take high heat, and will need replacing while a clad pan is still new. Buy one alongside a clad set.
Anything marketed as "ceramic titanium". Usually a ceramic coating with a small amount of titanium in the mix or in a base layer. Whether it changes anything is not demonstrated. See what "titanium cookware" actually means.

The trade-off. Handles are the weak point. They are riveted and sturdy, but they get hot on a gas ring in a way the more expensive clad brands' do not.
