Construction
An aluminum body with a ceramic-coated cooking surface, a stainless steel base plate for induction, and stainless steel handles. That is a stamped or cast aluminum pan with a magnetic disc - not clad construction, and Caraway does not claim otherwise.
Aluminum is the correct body material for a coated pan: it conducts about fifteen times better than stainless, and since the coating does the food-contact work, the aluminum never touches anything acidic. The reasoning is in stainless steel versus aluminum.

The third-party testing, which is genuinely unusual
Most cookware marketed on health claims says what it is free of. Caraway publishes that its coating was third-party tested for over 200 forever chemicals and links the results.
That is a materially different kind of claim. "Free from PFAS" is an assertion; a linked third-party test report is evidence you can go and read. Whatever you conclude about ceramic coatings generally, this is the behavior the rest of the category should be copying, and it is worth saying so.
Caraway publishes: do not place your pans in the dishwasher, as this will damage the ceramic coating. That is unambiguous, and it is the opposite of what most buyers assume about a modern premium pan. If everything in your kitchen goes in the machine, this is the specification that should decide your purchase.
Low to medium heat
Caraway publishes low to medium heat guidance to preserve the coating. Read alongside the 550F oven rating, the honest interpretation is that the oven number describes what the pan tolerates and the heat guidance describes how to make the coating last. Both are true and only one is on the marketing.
This is a general truth about ceramic coatings rather than a Caraway failing. Ceramic sol-gel surfaces lose release through thermal cycling more than through scratching, which is why every maker publishes a low-heat instruction and why ceramic pans typically stop releasing sooner than PTFE ones.
What it does not publish
Country of manufacture. Not stated on the product page, from a brand whose whole proposition is transparency about what is in the pan.
Warranty terms. A warranty page exists; the terms are not on the product page.
Metal utensil guidance. Absent, which in practice means no.
Coating lifespan. As with every maker in the category, nobody publishes one.
Weight. Minor, but it is the kind of figure the rest of this page's competitors do publish.
Who this is genuinely for
Buy it if documented PFAS testing is the thing you care about, you hand wash, and you cook on low to medium heat.
Buy it if you want the storage system - the sets ship with racks and lid holders, which is a real convenience and is covered in best cookware storage and organizers.
Skip it if you use a dishwasher, sear at high heat, or want a pan that lasts decades.
Skip it if "non-toxic" is the whole reason. Bare clad stainless and cast iron have no coating at all - best non-toxic cookware sets.
The verdict
Caraway is a well-made aluminum pan with a ceramic coating and the best published testing evidence in its category, sold at a premium that is partly for the design and partly for the documentation. It is a consumable, like every coated pan, and the company's own care instructions tell you so more honestly than most.
The strongest argument against it is not safety - it is economics. A coated pan with a finite life at a premium price is a worse value proposition than the same pan bought cheaply and replaced, unless the testing documentation is worth the difference to you. That is a legitimate thing to value.
