The short answer
Aluminum conducts at about 237 watts per meter-kelvin against stainless steel's 15 to 16, which is why aluminum is inside almost every good pan and stainless is on the outside of it. Stainless is hard, non-reactive and dishwasher-tolerant; aluminum is soft and reacts with acidic food. A clad pan is both - an aluminum core between stainless layers - and that is what most kitchens should buy. Bare aluminum still wins for bakeware, where reactivity barely matters and conduction is everything.

Why nearly every good pan is both
The industry solved this argument decades ago by not choosing. A clad pan is a sandwich: stainless on the cooking surface for hardness and non-reactivity, aluminum in the middle for conduction, stainless on the outside for durability and induction.
You get the conduction of aluminum with a cooking surface that will not react with a tomato sauce. You pay for it in weight and in price, and you get a pan that lasts decades.
Fully clad means the layers run up the walls. Heat reaches food at the sides, not just the base.
Disc bottom means a slug of aluminum bonded to the base only. Cheaper, and the walls are single-layer stainless that barely conducts.
Which one you are looking at is frequently unclear from the listing, and the language used to blur it is cataloged in disc bottom versus fully clad.
The reactivity question, honestly
Bare aluminum reacts with acidic and alkaline foods. Cook tomatoes, wine, lemon or vinegar in an uncoated aluminum pan for long enough and two things happen: the food picks up a metallic taste and a grayish tint, and the pan pits.
Is that a health problem? The published position from health agencies is that dietary aluminum from cookware is a small fraction of total intake, most of which comes from food additives and drinking water. The taste and the pitting are the practical reasons to avoid it, and they are reason enough.
Anodized aluminum is a different case. Anodizing grows a hard oxide layer on the surface, which is non-reactive as well as hard. That is the point of the material, and it is why hard-anodized pans can cook a tomato sauce where a bare aluminum one should not - best hard anodized cookware.
The three places bare aluminum is the right buy
Sheet pans and bakeware
Baking is a conduction problem and rarely an acid one. An uncoated aluminum half sheet browns more evenly than any stainless pan, costs a fraction, and its tendency to discolor is cosmetic. A stainless sheet pan is a worse pan at a higher price. The argument in full is in sheet pan materials.
Anything where weight is the constraint
A third of the weight for the same size. That matters for camping, for very large pots, and for anyone who finds a full clad skillet hard to lift - cookware for camping and RVs.
Commercial-style cheap pans you expect to replace
Restaurant kitchens run bare aluminum sauté pans and sauce pots because they conduct well, weigh little and cost almost nothing. They dent, they discolor, and they get replaced. That is a legitimate strategy if you are honest that it is the one you have chosen. commercial aluminum pans - we have not audited a specific model.
Induction settles it for some kitchens
Induction needs a ferromagnetic base. Bare aluminum has none, so it simply does not work - no adapter disc, no workaround worth having. Clad pans with a magnetic stainless exterior do work, and disc-bottom pans usually do because the disc is capped with magnetic steel.
If your stove is induction, that removes bare aluminum from the cookware conversation entirely while leaving it perfectly valid for bakeware, which never touches the hob - cookware for induction.

Notice that the answer is almost never bare stainless on its own. A pan that is only stainless conducts badly, which is why unclad stainless pans have hot spots.
The pan nobody should buy: unclad stainless
A single-layer stainless pan with no aluminum anywhere is the worst of both worlds. It conducts at 15 W/m-K, so the flame draws a hot ring on the base and everything burns in that ring. They exist because they are cheap to make and they look like the good ones.
The tell is weight and a stated construction. A pan that publishes no core, no ply count and no disc is very likely to be exactly this. That, plus why food sticks to stainless even when the pan is good, is covered in why food sticks to stainless steel.
Care, where the two materials diverge most
Stainless takes abuse. Metal utensils, scouring powder, the dishwasher. Discoloration comes off with an acid cleaner - cleaning burnt stainless.
Aluminum does not. Dishwasher detergent is alkaline and etches it chalky gray, permanently. Hand wash bare aluminum, always.
Anodized aluminum is stricter still. The dishwasher strips the anodizing, and once it is gone the pan is bare aluminum again.
Neither rusts, which is the one advantage both have over iron and carbon steel.

The trade-off. Handles are the weak point. They are riveted and sturdy, but they get hot on a gas ring in a way the more expensive clad brands' do not.
Skip this if. You want a set you can leave in the oven above 500F, or you cook mostly eggs and pancakes and would rather spend the money on one good nonstick pan.
