Own both. Stainless steel is the permanent pan - no coating, no wear surface, oven ceilings from 500F to 1050F, and it browns and builds fond in a way no coated pan can. Ceramic is a consumable that releases eggs and fish effortlessly and loses that ability over a few years, usually through thermal cycling rather than scratching. Buy stainless properly once, buy ceramic cheaply and repeatedly, and use each for what it is good at.
The comparison people think they are making
Framed as a material question, this looks like steel against ceramic. It is not. Ceramic cookware is not ceramic - it is a metal pan, almost always aluminum, with a silica-based sol-gel coating sprayed and cured onto the cooking surface.
So the real comparison is between a bare metal pan and a coated metal pan. That reframes the whole decision, because coatings have a service life and bare metal does not.

The row that decides it is the fifth. Everything a ceramic pan is bought for is at its best on day one and declines from there; a stainless pan is the same on day 3,000.
What ceramic genuinely wins
Eggs. Nothing else is this easy, and technique does not have to be perfect.
Delicate fish. A fillet that would tear on stainless comes off whole - best pans for fish.
Pancakes and crepes. Even release across a whole surface.
Low-fat cooking. You can genuinely use less oil.
Washing up. A wipe rather than a scrub.
PTFE-free, if that matters to you. Ceramic coatings are a real alternative chemistry rather than a rebrand - PTFE versus ceramic nonstick.
What stainless wins
Browning and fond. The stuck-on brown residue that ceramic prevents is the base of every pan sauce, gravy and braise.
High heat. Searing needs temperatures no coating tolerates.
Oven and broiler work. 600F and up against 400F to 550F.
Metal utensils, without thinking about it.
Acidic cooking. Long tomato and wine reductions, which shorten a coating's life.
Permanence. It does not degrade, and a lifetime warranty on it means something.
The technique that makes stainless behave - preheat properly, let the pan release the food rather than forcing it - is in why food sticks to stainless steel. Most people who conclude stainless is difficult are cooking on a cold pan.
The ten-year arithmetic
We do not publish prices, so this is structural rather than numeric - but the shape of it is what matters.
A clad stainless skillet is one purchase. In ten years it is the same pan, doing the same job.
A ceramic skillet is a purchase every few years. No maker publishes a lifespan, which is the single most telling fact in the category - how long nonstick lasts.
Premium ceramic does not change this. It fails on the same schedule, so paying more multiplies the cost rather than delaying it.
Therefore: buy stainless at the quality level you can afford, and buy ceramic at the cheapest level that is heavy enough not to warp.
That is the practical conclusion of this entire page, and it is the opposite of how these pans are usually sold. The expensive-looking ceramic set is the one to skip; the expensive stainless set is the one that pays back.
Why ceramic wears out faster than PTFE
Worth understanding, because it changes how you use the pan.
A ceramic sol-gel coating is a thin, hard, slightly porous silica layer. It loses release primarily through thermal cycling - repeated heating and cooling causes microscopic cracking, and oil polymerizes into the pores and builds an invisible varnish that food then sticks to.
What that means in practice
Low to medium heat, always. Every ceramic maker publishes this and it is the single biggest factor in service life.
Never preheat empty. Oil in the pan from the start.
Never aerosol cooking spray. It polymerizes into the pores fastest of anything.
Wash gently and dry properly, and check the maker's guidance - Caraway publishes not dishwasher safe, Zwilling publishes dishwasher safe.
When food starts sticking, the pan is telling you its life is ending. That is not a failure of the pan; it is the product working as designed.
Both materials are safe in normal use and neither is a scandal.
Stainless transfers trace chromium and nickel, most measurably from new pans and long acidic cooking; the quantities are small and it matters practically only for people with a diagnosed nickel sensitivity - is stainless steel cookware safe.

The pans that try to be both
Two approaches exist and both are real, with real limits.

The trade-off. Handles are the weak point. They are riveted and sturdy, but they get hot on a gas ring in a way the more expensive clad brands' do not.
